Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the almond flour, coconut flour, baking soda, and salt.
  3. In another bowl, whisk together the egg, honey (or maple syrup), melted coconut oil, and vanilla extract.
  4. Combine the wet and dry ingredients, then fold in the chopped pistachios.
  5. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes or until golden brown.
  7. Allow to cool before serving.

Notes

  • For extra flavor, add a pinch of cardamom.
