- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen cherries, pitted and halved
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, mix together the gluten-free flour, sugar, baking powder, and salt.
- Add the melted butter, eggs, and vanilla extract to the dry ingredients and stir until well combined.
- Gently fold in the cherries.
