Gluten-Free Cherry Cobbler Muffins

  • 2 cups gluten-free all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen cherries, pitted and halved

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix together the gluten-free flour, sugar, baking powder, and salt.
  3. Add the melted butter, eggs, and vanilla extract to the dry ingredients and stir until well combined.
  4. Gently fold in the cherries.
  5. Divide the batter among the prepared muffin cups.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in the pan for a few minutes before transferring to a wire rack.

Notes

  • For a sweeter muffin, add more sugar to taste.
  • Cherries can be substituted with other fruits like blueberries or peaches.
