  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, ginger, cinnamon, baking soda, salt, and cocoa powder.
  3. In another bowl, mix the brown sugar, molasses, oil, egg, and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  5. Chill the dough in the refrigerator for 30 minutes.
  6. Roll tablespoon-sized amounts of dough into balls, then roll in powdered sugar.
  7. Place on a baking sheet lined with parchment paper and bake for 10-12 minutes.
  8. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
