Gingerbread Cheesecake

  • 1 1/2 cups gingerbread cookie crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup sour cream

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a bowl, mix gingerbread crumbs, granulated sugar, and melted butter until combined.
  3. Press the mixture into the bottom of a springform pan.
  4. In a large mixing bowl, beat cream cheese and brown sugar until smooth.
  5. Add vanilla and eggs, mixing well after each addition.
  6. Stir in the spices and sour cream until fully incorporated.
  7. Pour the cream cheese mixture over the crust.
  8. Bake for 50-60 minutes or until the center is set.
  9. Cool to room temperature, then refrigerate for at least 4 hours before serving.

Notes

  • For best flavor, use room temperature cream cheese.
  • Top with whipped cream and additional gingerbread crumbs before serving.
