- 1 1/2 cups gingerbread cookie crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 cup sour cream
- Preheat oven to 325°F (160°C).
- In a bowl, mix gingerbread crumbs, granulated sugar, and melted butter until combined.
- Press the mixture into the bottom of a springform pan.
- In a large mixing bowl, beat cream cheese and brown sugar until smooth.
- Add vanilla and eggs, mixing well after each addition.
- Stir in the spices and sour cream until fully incorporated.
- Pour the cream cheese mixture over the crust.
- Bake for 50-60 minutes or until the center is set.
- Cool to room temperature, then refrigerate for at least 4 hours before serving.
