Garlic Parmesan Stuffed Spaghetti Squash with Chicken

Ingredients

  • 1 spaghetti squash
  • 2 cups cooked chicken, shredded
  • 1 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut spaghetti squash in half and scoop out seeds.
  3. Drizzle olive oil over the squash and season with salt and pepper.
  4. Place squash cut side down on a baking sheet and bake for 40 minutes.
  5. In a skillet, sauté garlic in olive oil until fragrant.
  6. Add shredded chicken, parmesan cheese, and Italian seasoning; mix well.
  7. Remove squash from the oven, fluff with a fork, and mix in the chicken mixture.
  8. Return to the oven for an additional 10 minutes.

Notes

  • For a vegetarian version, omit the chicken and add more vegetables.
  • Feel free to use different cheeses according to your preference.
