Ingredients

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 cups almond milk
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (blueberries, raspberries, strawberries)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the almond milk, honey (or maple syrup), eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined.
  5. Fold in the mixed berries.
  6. Pour the mixture into a greased baking dish.
  7. Bake for 30-35 minutes, or until the top is golden brown and a toothpick comes out clean.
