French Onion Chicken Orzo Casserole

Unique and delicious casserole featuring flavors of French onion soup combined with tender orzo and crispy turkey bacon.

  • 2 cups orzo
  • 4 slices turkey bacon
  • 1 large onion, thinly sliced
  • 3 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • 1 cup shredded cheese
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the turkey bacon until crispy, then remove and crumble.
  3. Add onions to the same skillet and sauté until caramelized.
  4. In a bowl, combine cooked orzo, chicken broth, garlic powder, thyme, crumbled turkey bacon, and sautéed onions.
  5. Transfer the mixture to a baking dish, top with shredded cheese.
  6. Bake for 25-30 minutes until cheese is bubbly.

Notes

  • For extra flavor, add a splash of sherry to the onions while cooking.
  • This casserole can be made ahead and reheated.
