French Onion Chicken Orzo Casserole

A creamy and comforting casserole that combines tender chicken, flavorful orzo, and the rich taste of French onion soup.

  • 2 cups orzo pasta
  • 4 cups chicken broth
  • 1 cup French onion soup
  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (Swiss or Gruyère)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, heat olive oil over medium heat. Add garlic powder and onion powder, stirring until fragrant.
  3. Add chicken broth and French onion soup. Bring to a boil.
  4. Stir in the orzo pasta and cook for about 10 minutes until al dente.
  5. Fold in shredded chicken and half of the cheese.
  6. Transfer the mixture to a baking dish, top with remaining cheese, and bake for 20-25 minutes until golden and bubbly.
  7. Let stand for a few minutes before serving.

Notes

  • For added flavor, you can sauté some additional onions until caramelized before adding them to the mix.
  • Feel free to substitute the chicken with cooked sausage or vegetables for a different twist.
