French Onion Chicken and Orzo

A comforting dish that combines the rich flavors of French onion soup with tender chicken and orzo pasta.

  • 2 cups water
  • 1 pound chicken thighs
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 cup orzo pasta
  • 1 cup shredded cheese (Gruyère or Swiss)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the sliced onions and cook until they are caramelized.
  2. Add the chicken thighs and brown on both sides.
  3. Pour in the beef broth and water, then stir in thyme.
  4. Simmer until the chicken is cooked through.
  5. Remove the chicken and add the orzo to the pot. Cook until al dente.
  6. Return the chicken to the pot, top with cheese, cover, and let it melt.
