Festive Pistachio Cranberry Cake Roll Recipe | Easy Holiday Dessert

A delightful holiday dessert combining the flavors of pistachio and cranberry.

  • 1 cup all-purpose flour
  • 1/2 cup pistachio nuts, chopped
  • 1/2 cup dried cranberries
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and line a baking sheet with parchment paper.
  3. In a bowl, whisk eggs and sugar until light and fluffy.
  4. Fold in flour, salt, and vanilla extract.
  5. Pour the batter onto the prepared baking sheet and spread evenly.
  6. Bake for 12-15 minutes or until golden brown.
  7. Remove from oven and let cool.
  8. Whip the heavy cream with powdered sugar until stiff peaks form.
  9. Spread whipped cream over the cooled cake, then sprinkle with pistachios and cranberries.
  10. Roll the cake gently from one end to the other.
  11. Chill for at least 1 hour before slicing and serving.

Notes

  • For a variation, add orange zest to the whipped cream.
  • Make sure the cake is completely cool before rolling to prevent cracking.
