Extra Cheesy Creamy Lasagna Soup

A delicious and hearty lasagna soup featuring creamy flavors and turkey bacon.

  • 1 pound turkey bacon
  • 1 onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 can (15 ounces) crushed tomatoes
  • 2 cups lasagna noodles broken
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese shredded
  • 1/2 cup Parmesan cheese grated
  • 1 tablespoon Italian seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove from pot and set aside.
  2. Add onion and garlic to the pot, cooking until soft.
  3. Stir in chicken broth, crushed tomatoes, Italian seasoning, salt, and pepper.
  4. Bring to a boil, then add the broken lasagna noodles.
  5. Simmer until the noodles are al dente.
  6. Stir in ricotta and half of the mozzarella until melted and well combined.
  7. Serve hot, topped with the remaining mozzarella and crispy turkey bacon.

Notes

  • This soup can be made ahead of time and stored in the refrigerator.
  • Feel free to add more vegetables like spinach or mushrooms for added nutrition.
