- 1 pound chicken breast, sliced
- 4 cups chicken broth
- 1 can coconut milk
- 2 tablespoons red curry paste
- 1 tablespoon fish sauce
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- 1 cup mushrooms, sliced
- 1 cup bell peppers, sliced
- 2 cups spinach
- 1 lime, juiced
- In a large pot, heat the chicken broth over medium heat.
- Add the chicken and cook until no longer pink.
- Stir in the coconut milk, red curry paste, fish sauce, garlic, and ginger.
- Add the mushrooms and bell peppers, and cook until soft.
- Stir in the spinach and lime juice just before serving.
