Easy Thai Chicken Soup

A warm and comforting soup that brings the flavors of Thailand right to your kitchen.

Ingredients

  • 1 pound chicken breast, sliced
  • 4 cups chicken broth
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1 cup mushrooms, sliced
  • 1 cup bell peppers, sliced
  • 2 cups spinach
  • 1 lime, juiced

Instructions

  1. In a large pot, heat the chicken broth over medium heat.
  2. Add the chicken and cook until no longer pink.
  3. Stir in the coconut milk, red curry paste, fish sauce, garlic, and ginger.
  4. Add the mushrooms and bell peppers, and cook until soft.
  5. Stir in the spinach and lime juice just before serving.

Notes

  • Adjust the spice level by adding more or less curry paste.
  • Serve with fresh cilantro for garnish.
