Easy Thai Chicken Soup

A comforting and flavorful Thai chicken soup that is easy to prepare.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound boneless chicken breast, sliced
  • 4 cups chicken broth
  • 1 can coconut milk (400 ml)
  • 2 cups mushrooms, sliced
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce
  • 1 teaspoon lime juice
  • 2 green onions, chopped
  • 1 handful fresh cilantro, chopped

Instructions

  1. Heat the vegetable oil in a pot over medium heat.
  2. Add the sliced chicken and cook until browned.
  3. Stir in garlic, ginger, and red curry paste, cooking for another minute.
  4. Add the chicken broth and bring to a simmer.
  5. Stir in coconut milk, mushrooms, and bell pepper; cook for 10 minutes.
  6. Season with soy sauce and lime juice.
  7. Garnish with green onions and cilantro before serving.

Notes

  • This soup can be adjusted for spice by adding more curry paste.
  • Feel free to add other vegetables like bok choy or carrots.
