  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 4 cups chicken broth
  • 1 can coconut milk
  • 2 cups vegetables (such as bell peppers and carrots)
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • fresh cilantro for garnish

Instructions

  1. Heat coconut oil in a large pot over medium heat.
  2. Add diced chicken and cook until browned.
  3. Add onion, garlic, and ginger, and sauté until fragrant.
  4. Stir in red curry paste and cook for another minute.
