  • 1 pound chicken breast, diced
  • 2 cups coconut milk
  • 2 tablespoons red curry paste
  • 4 cups chicken broth
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced
  • 2 cups spinach
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Stir in the red curry paste and cook for an additional minute.
  4. Pour in the coconut milk and chicken broth, bringing the mixture to a simmer.
  5. Add the sliced bell peppers and carrots, and cook until tender.
  6. Stir in the spinach, fish sauce, brown sugar, and lime juice.
  7. Simmer for an additional 5 minutes, then serve hot with cilantro on top.

Notes

  • For a vegetarian version, substitute chicken with tofu.
