  • 1 pound chicken breast, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 4 cups chicken broth
  • 1 can coconut milk
  • 2 cups mixed vegetables (carrots, bell peppers, snap peas)
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • fresh cilantro, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced chicken and cook until browned.
  3. Stir in onion, garlic, and ginger; sauté until onion is translucent.
  4. Add red curry paste and cook for 1 minute.
  5. Pour in chicken broth and coconut milk; bring to a simmer.
  6. Add mixed vegetables and cook until tender.
  7. Stir in fish sauce and lime juice.
  8. Serve hot, garnished with fresh cilantro.

Notes

  • Adjust the spiciness by adding more or less curry paste.
  • For a vegetarian version, substitute chicken with tofu.
