- 1 pound chicken breast, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons red curry paste
- 4 cups chicken broth
- 1 can coconut milk
- 2 cups mixed vegetables (carrots, bell peppers, snap peas)
- 1 tablespoon fish sauce
- 1 tablespoon lime juice

- In a large pot, heat olive oil over medium heat.
- Add diced chicken and cook until browned.
- Stir in onion, garlic, and ginger; sauté until onion is translucent.
- Add red curry paste and cook for 1 minute.

- Stir in fish sauce and lime juice.
