Easy Stuffed Bell Peppers with Ground Beef and Rice

A delicious and easy recipe for stuffed bell peppers filled with ground beef and rice.

Ingredients

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the ground beef, onion, and garlic until the beef is browned.
  4. Add the cooked rice, diced tomatoes, salt, pepper, and Italian seasoning to the skillet. Mix well.
  5. Stuff the mixture into the bell peppers and place them in a baking dish.
  6. If using, sprinkle cheese on top of the stuffed peppers.
  7. Bake for 25-30 minutes until the peppers are tender.

Notes

  • For a vegetarian version, substitute ground beef with a meat alternative.
  • Feel free to add other vegetables to the stuffing for added nutrition.
