Easy Olive Garden Zuppa Toscana Soup

A delicious and easy-to-make version of the classic Olive Garden Zuppa Toscana Soup, featuring turkey bacon and chicken ham.

Ingredients

  • 4 pieces turkey bacon
  • 1 cup chicken ham
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 2 large potatoes, sliced
  • 1 cup heavy cream
  • 1 teaspoon red pepper flakes
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble, leaving the drippings in the pot.
  2. Add the diced onion and minced garlic to the pot and sauté until softened.
  3. Pour in the chicken broth and add the sliced potatoes. Bring to a boil and then reduce to a simmer.
  4. Once the potatoes are tender, stir in the kale, chicken ham, cream, red pepper flakes, and the crumbled bacon.
  5. Simmer for an additional 5-10 minutes. Season with salt and pepper to taste.
  6. Serve hot and enjoy!

Notes

  • For a spicier kick, add more red pepper flakes.
  • Substitute regular bacon for turkey bacon if desired.
