Ingredients

  • 1 pound chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon cinnamon
  • 1 can chickpeas, rinsed and drained
  • 4 cups chicken broth
  • 2 cups chopped kale
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, cooking until softened.
  2. Stir in garlic, ginger, cumin, and cinnamon, cooking for an additional minute.
  3. Add chicken thighs and cook until browned on both sides.
  4. Pour in chicken broth and bring to a boil. Reduce heat and let simmer for 30 minutes.
  5. Add chickpeas and kale, cooking for another 10 minutes until the chicken is cooked through.
  6. Remove chicken, shred it, and return it to the pot. Serve hot.

Notes

  • For added flavor, serve with lemon wedges.
