Easy Homemade Chicken Pot Pie Casserole Recipe with Turkey Bacon

- 1 pound chicken, cooked and shredded
- 8 ounces turkey bacon, cooked and chopped
- 2 cups mixed vegetables (peas, carrots, corn)
- 1 cup cream of chicken soup
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 cup shredded cheddar cheese
- 1 package refrigerated pie crusts
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the shredded chicken, turkey bacon, mixed vegetables, cream of chicken soup, garlic powder, onion powder, paprika, and half of the cheddar cheese.
- Roll out one pie crust and fit it into a greased casserole dish.
- Pour the chicken mixture into the pie crust and spread evenly.
- Cover the mixture with the second pie crust, sealing the edges.
- Cut slits in the top crust to allow steam to escape.
- Bake for 30-35 minutes, or until the crust is golden brown.
- Remove from the oven and sprinkle the remaining cheese on top. Allow to cool for 10 minutes before serving.
Notes
- For a healthier version, substitute the cream of chicken soup with a homemade version or a low-fat option.
- You can also use leftover turkey or rotisserie chicken.
