Easy Homemade Chicken Pot Pie Casserole Recipe

A comforting and delicious chicken pot pie casserole made easy with the addition of turkey bacon.

  • 1 pound chicken, cooked and shredded
  • 8 ounces turkey bacon, cooked and chopped
  • 2 cups mixed vegetables (peas, carrots, corn)
  • 1 cup cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 cup shredded cheddar cheese
  • 1 package refrigerated pie crusts

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the shredded chicken, turkey bacon, mixed vegetables, cream of chicken soup, garlic powder, onion powder, paprika, and half of the cheddar cheese.
  3. Roll out one pie crust and fit it into a greased casserole dish.
  4. Pour the chicken mixture into the pie crust and spread evenly.
  5. Cover the mixture with the second pie crust, sealing the edges.
  6. Cut slits in the top crust to allow steam to escape.
  7. Bake for 30-35 minutes, or until the crust is golden brown.
  8. Remove from the oven and sprinkle the remaining cheese on top. Allow to cool for 10 minutes before serving.

Notes

  • For a healthier version, substitute the cream of chicken soup with a homemade version or a low-fat option.
  • You can also use leftover turkey or rotisserie chicken.
