  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup lemon juice
  • 1 tbsp baking powder
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract
  • 4 slices turkey bacon

Instructions

  1. In a large bowl, mix together the ricotta cheese, eggs, milk, lemon juice, sugar, and vanilla extract until smooth.
  2. In another bowl, combine the flour, baking powder, and salt.
  3. Slowly add the dry ingredients to the wet ingredients, stirring until just combined.
  4. Heat a non-stick skillet over medium heat and pour in the batter to form pancakes.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. In a separate pan, cook the turkey bacon until crispy.
  7. Serve the pancakes hot with turkey bacon on the side.
