Easy Creamy Lasagna Soup

  • 1 pound turkey bacon
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 can (15 ounces) tomato sauce
  • 2 cups uncooked lasagna noodles, broken
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons fresh basil, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. In the same pot, sauté onion and garlic until soft.
  3. Add chicken broth and tomato sauce, bring to a boil.
  4. Stir in broken noodles, Italian seasoning, salt, and pepper. Cook until noodles are al dente.
  5. Lower the heat and mix in ricotta and Parmesan cheeses until melted and combined.
  6. Stir in mozzarella and chopped turkey bacon. Cook until heated through.
  7. Garnish with fresh basil before serving.
