  • 1 pound boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup diced onion
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, bell pepper, and garlic; sauté until softened.
  2. Add the chicken breasts, taco seasoning, black beans, corn, diced tomatoes, and chicken broth.
  3. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the pot.
