Easy Chicken Pot Pie Soup Recipe

A comforting and delicious soup that combines the classic flavors of chicken pot pie in a warm and hearty bowl.

  • 4 slices turkey bacon
  • 1 pound chicken ham, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 2 cups russet potatoes, diced
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. In the same pot, add onion and garlic and sauté until transparent.
  3. Add the chicken ham, chicken broth, mixed vegetables, and potatoes to the pot.
  4. Bring to a boil and then reduce to a simmer for 20 minutes.
  5. Stir in the heavy cream, thyme, salt, and pepper. Cook for another 5 minutes.
  6. Garnish with chopped turkey bacon before serving.

Notes

  • For a thicker soup, you can add a cornstarch slurry.
  • Customize with your favorite vegetables.
