Easy Chicken Pot Pie Soup (Soup Sunday!)

  • 2 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup frozen peas
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine chicken broth, carrots, celery, and bring to a boil.
  2. Add the shredded chicken, peas, thyme, onion powder, salt, and pepper. Simmer for 10 minutes.
  3. Stir in the heavy cream and let it heat through.
  4. Serve warm, garnished with parsley if desired.
