  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix oil, sugar, and eggs until well combined.
  4. Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in grated carrots, pineapple, and walnuts if using.
  6. Fill each muffin cup about 2/3 full with batter.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean.
  8. Let cool completely before frosting.

Notes

  • For best results, use fresh carrots.
  • These cupcakes can be frosted with cream cheese frosting for added flavor.
