  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 2 cups diced potatoes
  • 1 onion, chopped
  • 1 bell pepper, diced
  • 2 tablespoons olive oil
  • 4 eggs
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced potatoes, and cook until golden brown, stirring occasionally.
  3. Add chopped onion and bell pepper, cooking until softened.
  4. Stir in diced turkey bacon and chicken ham, cooking until heated through.
  5. Make wells in the mixture and crack an egg into each well. Cover and cook until the eggs are done to your liking.
  6. Season with salt and pepper. Serve warm.
