Easter Poke Cake

A delightful dessert perfect for Easter celebrations, featuring layers of cake soaked in a vibrant fruity filling.

Ingredients

  • 1 box white cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup strawberry or raspberry Jell-O
  • 1 cup boiling water
  • 1 cup cold water
  • 2 cups whipped topping
  • 1 cup fresh strawberries, diced
  • 1/2 cup pastel sprinkles

Instructions

  1. Preheat oven to 350°F. Grease a 9×13 inch baking pan.
  2. In a large bowl, combine cake mix, water, vegetable oil, and eggs. Beat on medium speed for 2 minutes.
  3. Pour the batter into the prepared baking pan and bake according to package instructions.
  4. While the cake is baking, dissolve the Jell-O in boiling water, then add cold water.
  5. Once the cake is done, let it cool for 10 minutes, then poke holes all over the cake with a fork.
  6. Pour the Jell-O mixture over the warm cake, allowing it to soak in.
  7. Let the cake cool completely before topping with whipped topping and fresh strawberries.
  8. Sprinkle pastel sprinkles on top and refrigerate for at least 2 hours before serving.

Notes

  • For additional flavor, you can add a layer of cream cheese frosting under the whipped topping.
  • Substitute Jell-O flavors for a different taste experience.
