Deliciously Simple Crockpot Chicken Pot Pie for a Cozy Dinner

A warm and comforting chicken pot pie made effortlessly in a crockpot.

Ingredients

  • 1 pound boneless chicken thighs
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme
  • 1 pie crust

Instructions

  1. Place the chicken thighs in the crockpot.
  2. Add the mixed vegetables, cream of chicken soup, and chicken broth.
  3. Season with garlic powder, onion powder, salt, black pepper, and thyme.
  4. Stir to combine all the ingredients.
  5. Cover and cook on low for 6-7 hours.
  6. 30 minutes before serving, add the pie crust on top and cover to let it bake slightly.
  7. Once finished, shred the chicken and mix it back into the pot.
