Decadent Lentil Tortilla Soup

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 carrots, diced
  • 4 cups vegetable broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 2 cups tortilla chips
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup cilantro, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, garlic, bell pepper, and carrots, sauté until softened.
  2. Add lentils, vegetable broth, canned tomatoes, cumin, paprika, chili powder, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer for 25-30 minutes, until lentils are tender.
  4. Serve hot, topped with tortilla chips, cheese, and cilantro.
