  • 1 medium onion, diced

  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon salt

  • 1 tablespoon olive oil

Instructions

  1. In a frying pan, heat olive oil over medium heat and sauté onions and garlic until translucent.
  2. Add the sliced mushrooms and continue to sauté until soft.
  3. Transfer the mixture to the crockpot.
  4. Pour in the vegetable broth, thyme, salt, and black pepper. Stir well.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. About 30 minutes before serving, stir in the heavy cream.
  7. Blend if a smoother texture is preferred, then serve warm.
