Crockpot Lasagna Soup

Ingredients

  • 1 pound ground beef
  • 1 onion diced
  • 2 cloves garlic minced
  • 28 ounces crushed tomatoes
  • 6 cups beef broth
  • 12 ounces lasagna noodles
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 tablespoon Italian seasoning
  • salt and pepper to taste

Instructions

  1. In a skillet, brown the ground beef with onions and garlic.
  2. Add crushed tomatoes and beef broth to the crockpot.
  3. Stir in browned beef mixture.
  4. Break lasagna noodles and add to the crockpot.
  5. Cook on low for 6-8 hours or high for 3-4 hours.
  6. Before serving, stir in ricotta and top with mozzarella cheese.

Notes

  • For a vegetarian version, substitute ground beef with mushrooms or lentils.
