- 1 pound boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 4 cups chicken broth
- 1 cup diced carrots
- 1 cup diced celery
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup frozen peas
- Place the chicken breasts at the bottom of the crockpot.
- Add the rice, chicken broth, carrots, celery, onion, garlic, thyme, salt, and black pepper on top of the chicken.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, shred the chicken and stir in the frozen peas.
- Let it cook for an additional 30 minutes before serving.
Notes
- For a creamier soup, stir in some heavy cream before serving.
- Feel free to add more vegetables according to your preference.
