Crockpot Chicken & Rice Soup

A warm and comforting crockpot chicken and rice soup that is easy to prepare and perfect for cozy nights.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 4 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup frozen peas

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the rice, chicken broth, carrots, celery, onion, garlic, thyme, salt, and black pepper on top of the chicken.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, shred the chicken and stir in the frozen peas.
  5. Let it cook for an additional 30 minutes before serving.

Notes

  • For a creamier soup, stir in some heavy cream before serving.
  • Feel free to add more vegetables according to your preference.
