Crockpot Broccoli Cheese Soup

A deliciously creamy and comforting broccoli cheese soup made in a crockpot, enhanced with the flavor of turkey bacon.

  • 1 tablespoon olive oil
  • 6 slices turkey bacon
  • 1 onion, chopped
  • 4 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Sauté the turkey bacon in olive oil until crispy. Remove and set aside.
  2. In the same pot, add chopped onion and sauté until translucent.
  3. Add broccoli florets and vegetable broth to the pot.
  4. Cook on low for 4 hours.
  5. Blend the mixture until smooth.
  6. Stir in cheese, milk, salt, and pepper until melted and combined.
  7. Top with crispy turkey bacon before serving.

Notes

  • For a thicker soup, blend more of the broccoli mixture.
  • Adjust seasoning to taste.
