  • 4 slices turkey bacon
  • 1/4 cup mayonnaise

  • 2 tablespoons chopped fresh chives

Instructions

  1. Boil the potatoes in salted water until tender.
  2. Preheat the oven to 425°F (220°C).
  3. Drain the potatoes and let them cool slightly.
  4. Place the potatoes on a baking sheet and smash them gently with a fork.
  5. Bake for 20-25 minutes until crispy.
  6. Meanwhile, cook the turkey bacon until crispy and crumble it.
  7. In a bowl, mix the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper.
  8. Once the potatoes are crispy, remove them from the oven and let them cool slightly.
