  • 1 cup orzo
  • 2 cups spinach
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add salmon fillets and cook until golden brown, about 4-5 minutes per side. Remove from skillet.
  3. In the same skillet, add minced garlic and cook for 1 minute.
  4. Add orzo and stir for a minute to toast.
  5. Pour in cream and bring to a simmer.
  6. Add spinach and stir until wilted.
  7. Return salmon to the skillet, drizzle with lemon juice, and season with salt and pepper.
  8. Cook for an additional 2 minutes until heated through.
