  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 8 cups sliced mushrooms
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the turkey bacon and cook until crispy.
  2. Stir in the onion and garlic; sauté until the onion is translucent.
  3. Add the sliced mushrooms and cook until they’re softened.
  4. Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for 15 minutes.
  5. Stir in the heavy cream and thyme, then let it simmer for another 10 minutes.
  6. Season with salt and pepper before serving.
