Creamy Mushroom Chicken and Wild Rice Soup

A comforting and creamy soup that combines tender chicken, mushrooms, and wild rice, enhanced with the savory flavor of turkey bacon.

  • 1 pound chicken breast, diced
  • 4 ounces turkey bacon, chopped
  • 1 cup wild rice
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Cook the turkey bacon until crispy, then remove and set aside.
  2. In the same pot, add diced chicken and cook until browned. Remove and set aside.
  3. Add onions, garlic, and mushrooms to the pot, sautéing until softened.
  4. Stir in wild rice, chicken broth, and thyme. Bring to a boil, then reduce heat to low and simmer for about 45 minutes.
  5. Add the cooked chicken and heavy cream, stirring well. Cook for an additional 10 minutes until heated through.
  6. Season with salt and pepper to taste. Serve topped with crispy turkey bacon.

Notes

  • For a lighter version, substitute heavy cream with half-and-half.
  • Feel free to add vegetables like carrots or celery for extra flavor.
