Ingredients

  • 1 cup wild rice
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery, and sauté until softened.
  3. Stir in the garlic and cook for an additional minute.
  4. Add the wild rice and chicken broth, bringing to a boil.
  5. Reduce heat, cover, and simmer until the rice is tender.
  6. Stir in the shredded chicken, heavy cream, and thyme, cooking until heated through.
  7. Season with salt and pepper to taste.

Notes

  • For a thicker soup, add more heavy cream.
