  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 can diced tomatoes
  • 1 cup corn
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 lime, juiced
  • 1 cup tortilla strips
  • 1/2 cup shredded cheese
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until soft.
  2. Add chicken, chicken broth, diced tomatoes, corn, cumin, chili powder, salt, and pepper. Bring to a simmer.
  3. Stir in heavy cream and lime juice, cooking until heated through.
  4. Serve hot, topped with tortilla strips, shredded cheese, and cilantro.

Notes

  • This soup can be made ahead of time and stored in the refrigerator.
  • For a spicier version, add diced jalapeños.
