Creamy Chicken Stroganoff

  • 1 pound chicken breast, sliced
  • 4 strips turkey bacon, chopped
  • 1 cup mushrooms, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup sour cream
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same skillet, add olive oil and sauté the onions and garlic until translucent.
  3. Add chicken pieces and cook until browned.
  4. Stir in the mushrooms and cook until softened.
  5. Pour in chicken broth and add paprika, salt, and pepper. Let it simmer for 10 minutes.
  6. Reduce heat and stir in sour cream until well combined. Return the turkey bacon to the skillet.
  7. Serve warm over noodles or rice.

Notes

  • For extra creaminess, add a splash of cream.
  • Serve with a sprinkle of fresh parsley for garnish.
