- 1 pound chicken breast
- 4 slices turkey bacon
- 1 cup long grain rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 tablespoons olive oil
- 1 bell pepper, chopped
- 1 onion, chopped
- 1 cup green peas
- Cook the turkey bacon in a skillet until crispy. Remove and set aside.
- In the same skillet, add olive oil and sauté onions and bell pepper until soft.
- Add the chicken breast and cook until browned.
- Stir in rice and Cajun seasoning, then pour in chicken broth.
- Bring to a boil, then reduce heat and cover. Simmer for 20 minutes.
- Stir in heavy cream and green peas, cooking for an additional 5 minutes.
- Top with crispy turkey bacon before serving.
Notes
- For a spicier dish, add more Cajun seasoning to taste.
- This recipe can also be made with shrimp or sausage.
