Creamy Cajun Chicken & Rice Bowls

Enjoy a flavorful twist on chicken and rice with creamy Cajun spices and turkey bacon.

Ingredients

  • 1 pound chicken breast
  • 4 slices turkey bacon
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons olive oil
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 cup green peas

Instructions

  1. Cook the turkey bacon in a skillet until crispy. Remove and set aside.
  2. In the same skillet, add olive oil and sauté onions and bell pepper until soft.
  3. Add the chicken breast and cook until browned.
  4. Stir in rice and Cajun seasoning, then pour in chicken broth.
  5. Bring to a boil, then reduce heat and cover. Simmer for 20 minutes.
  6. Stir in heavy cream and green peas, cooking for an additional 5 minutes.
  7. Top with crispy turkey bacon before serving.

Notes

  • For a spicier dish, add more Cajun seasoning to taste.
  • This recipe can also be made with shrimp or sausage.
