  • 2 cups chicken broth
  • 1 cup rice
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 green onions, sliced

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add diced onion, bell pepper, and garlic; sauté until softened.
  3. Season chicken with Cajun seasoning, then add to skillet and cook until browned.
  4. Add rice and chicken broth; stir well.
  5. Bring to a boil, then reduce heat and cover, simmering until rice is cooked.
