Creamy Butternut Squash and Kale Lasagna

Ingredients

  • 2 cups butternut squash, pureed
  • 2 cups kale, chopped
  • 12 lasagna noodles
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine butternut squash, kale, ricotta cheese, garlic, salt, pepper, and nutmeg.
  3. Spread a thin layer of the squash mixture across the bottom of a baking dish.
  4. Layer 4 lasagna noodles over the mixture, add another layer of the squash mixture, and sprinkle with mozzarella cheese.
  5. Repeat the layers until all ingredients are used, finishing with a layer of mozzarella and Parmesan on top.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake for another 15-20 minutes until golden and bubbly.
  7. Let it cool for 10 minutes before slicing and serving.

Notes

  • For added flavor, consider mixing in some herbs like basil or oregano.
  • If you prefer a bit of heat, add red pepper flakes to the squash mixture.
