- 2 cups butternut squash, pureed
- 2 cups kale, chopped
- 12 lasagna noodles
- 1 cup ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon nutmeg
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine butternut squash, kale, ricotta cheese, garlic, salt, pepper, and nutmeg.
- Spread a thin layer of the squash mixture across the bottom of a baking dish.
- Layer 4 lasagna noodles over the mixture, add another layer of the squash mixture, and sprinkle with mozzarella cheese.
- Repeat the layers until all ingredients are used, finishing with a layer of mozzarella and Parmesan on top.
- Cover with foil and bake for 30 minutes. Remove foil and bake for another 15-20 minutes until golden and bubbly.
- Let it cool for 10 minutes before slicing and serving.
