Creamy Avocado Green Spaghetti

A creamy and deliciously easy twist on traditional spaghetti, packed with healthy avocados.

Ingredients

  • 2 ripe avocados
  • 3 cloves of garlic
  • 1 tablespoon lemon juice
  • 12 ounces spaghetti
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook spaghetti according to package instructions.
  2. While the pasta is cooking, blend the avocados, garlic, lemon juice, olive oil, salt, and pepper in a food processor until smooth.
  3. Drain the pasta and return to the pot.
  4. Add the avocado sauce and cheese to the pasta, tossing to combine.
  5. Serve immediately.

Notes

  • Consider adding crushed red pepper for some heat.
  • This dish can be served cold as a salad as well.
