Cranberry White Chocolate Muffins

Deliciously moist muffins packed with tart cranberries and sweet white chocolate for a perfect treat.

  • 1 1/2 cups all-purpose flour
  • 1 cup fresh cranberries
  • 1/2 cup white chocolate chips
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, baking powder, salt, and sugars.
  3. In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined.
  5. Fold in cranberries and white chocolate chips.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra sweetness, add more white chocolate chips.
  • These muffins are best enjoyed fresh but can be frozen for later.
