Cranberry Meringue Pie: The Showstopping Holiday Dessert

  • 2 cups fresh cranberries
  • 1 cup sugar
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, combine cranberries, sugar, cornstarch, salt, and water. Cook over medium heat until cranberries burst and mixture thickens.
  3. Spread cranberry mixture into a pie crust and let cool.
  4. In a bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add sugar and continue beating until stiff peaks form.
  5. Spread meringue over the cooled cranberry filling.
  6. Bake for 10 minutes or until meringue is golden brown.

Notes

  • Add a pinch of cinnamon for extra flavor.
  • Ensure the meringue is spread all the way to the edges of the pie crust to prevent it from shrinking.
