Cozy Crockpot Quinoa Stuffed Peppers

Ingredients

  • 4 bell peppers
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup diced tomatoes
  • 1 cup shredded cheese

Instructions

  1. Rinse quinoa under cold water.
  2. In a bowl, mix quinoa, black beans, corn, cumin, chili powder, and diced tomatoes.
  3. Cut the tops off the bell peppers and remove seeds.
  4. Stuff the mixture into the bell peppers.
  5. Pour vegetable broth into the crockpot and place stuffed peppers upright.
  6. Cook on low for 6-8 hours or high for 3-4 hours.
  7. Sprinkle cheese on top for the last 30 minutes of cooking.
  8. Serve warm.
