  • 1/4 cup unsweetened shredded coconut
  • 2 large eggs
  • 1/4 cup butter, softened

  • 1 tablespoon lime zest
  • 1 tablespoon lime juice

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, cream the butter and sugar together.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Mix in the lime juice and zest.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the coconut milk.
  7. Fold in the shredded coconut.
  8. Fill the cupcake liners 2/3 full with batter.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Let cool before frosting.
