- 2 cups jasmine rice
- 1 pound chicken thighs
- 1 can coconut milk
- 2 cups chicken broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 bell pepper, sliced
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 2 teaspoons curry powder
- Salt and pepper to taste
- In a large pot, heat some oil over medium heat.
- Add chopped onions, garlic, and ginger, and sauté until fragrant.
- Add chicken thighs and cook until browned.
- Stir in rice, coconut milk, chicken broth, curry powder, soy sauce, and lime juice.
- Bring to a boil, then cover and reduce heat to low.
- Simmer for about 20 minutes, or until rice is cooked and chicken is tender.
- Stir in bell pepper and cook for an additional 5 minutes.
