Coconut Chicken & Rice

A delicious and easy recipe for coconut chicken rice perfect for your next meal.

Ingredients

  • 2 cups jasmine rice
  • 1 pound chicken thighs
  • 1 can coconut milk
  • 2 cups chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 bell pepper, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 2 teaspoons curry powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add chopped onions, garlic, and ginger, and sauté until fragrant.
  3. Add chicken thighs and cook until browned.
  4. Stir in rice, coconut milk, chicken broth, curry powder, soy sauce, and lime juice.
  5. Bring to a boil, then cover and reduce heat to low.
  6. Simmer for about 20 minutes, or until rice is cooked and chicken is tender.
  7. Stir in bell pepper and cook for an additional 5 minutes.

Notes

  • For added flavor, marinate the chicken in soy sauce before cooking.
  • This dish can be topped with fresh cilantro for garnish.
